Pork is still a poignant source of infection with Salmonella in Germany, according to a Bundesamt für Verbraucherschutz und Lebensmittelsicherheit (BVL).

Annual zoonosis monitoring
in 2015 showed decay of carcasses and beef can start during slaughter.

It also found a risk of Salmonella infection from pig beef is increasing due to tender expenditure (eg as Mett) notwithstanding a comparatively low decay rate during sell (0.4%).
